Growing up in an Italian-American family, Spam was not a staple - but as a student of American gastronomy, it was something I had to try in the early aughts, when seemingly every hip NYC restaurant had a Spam sandwich on their menu. And so as bougie as that sounds, my first time eating Spam, was in a semi-fine dining situation. It’s okay—I can admit that. I knew then, as I know now, that Spam can be delicious. 

The new Struggle Meals episode is on YouTube now, and I send one can of low-sodium Spam straight into Greek territory. Spam already brings plenty of salt, and the tzatziki gets seasoned too, so the low-sodium version keeps the finished gyro balanced and gives the oregano, cumin, coriander, cayenne, and thyme room to come through. I cut the Spam into thin matchsticks for maximum surface area, then let the spices coat every side. Once those strips hit a hot pan, I want real color. Browning equals flavor, and pale Spam has no place in this gyro.

The homemade pita is almost suspiciously easy. Self-rising flour, a little extra baking powder, salt, and full-fat yogurt make a tender skillet bread with no yeast and no long rise. It bubbles and browns in the pan, and a clean towel keeps each round warm and pliable. Homemade bread rarely asks so little or gives this much back.

Then there’s the tzatziki, the cool cucumber sauce I always want more of when I order a gyro. It’s easy to make at home, too. I salt grated cucumber, let it stand for five minutes, then squeeze out as much water as possible before mixing it with yogurt, garlic powder, and dill. That keeps the sauce thick and creamy enough to pile onto the pita. The second that crisp Spam hits the cool, garlicky tzatziki, this stops being a “weird Spam idea” and starts being a gyro I’d order again on purpose. Trust me, this is so good. That combination is doing more work than any $18 lunch special. It brings me right back to the street carts of the ’90s, when almost all of them seemed to be serving gyros.
