What to make for the cookout.

Clean the grates, check the propane, and make sure there’s something cold in the cooler. Hot Grill Summer is here, which means the cookout menu needs to do a few things at once: give people something to snack on right away, keep the sides interesting, and end with the thing everyone came for. A burger. Obviously.

Start with Stephanie Alvarado Engøy’s Fried Pickle Dip, because the first rule of hosting is having something out before anyone asks when the food will be ready. This one takes everything people love about fried pickles and turns it into a creamy, scoopable dip. Set it out with kettle chips or sturdy tortilla chips while you get the grill going and you’ll be saying “wait, who finished this?” in no time.

Then bring out Antonio Tapia’s Pendleton® Whisky Chicken Fajitas, a recipe made for a hot grill and a hungry crowd. Chicken thighs get marinated with Pendleton® Whisky, citrus, soy sauce, brown sugar, and bold spices before they’re grilled until juicy and charred in spots. Pile the chicken over the peppers and onions, set it out, and let everyone build their own plate.

For a side full of summer vibes, go with Mya Allen’s BLT Pasta Salad with Charred Corn. Crispy bacon, sweet corn, cherry tomatoes, red onion, arugula, and a herby buttermilk dressing make it creamy, bright, and cookout-ready. It also holds well, which is exactly what you want from a side dish that may be sitting between the chips, the wings, and someone’s second plate.

Noah Galuten’s Mezcal Charro Beans with Charred Peppers and Onions is the heartier side that might steal the show. The peppers and onions hit the grill first, then get folded into tender pinto beans with garlic, smoked paprika, and a splash of mezcal. Finish with olive oil and Cotija, and you’ve got the kind of side that goes with everything.

And finally, because your grill called and it wants burgers, end with Noah Galuten’s Backyard Burgers. They’re classic in exactly the right way, but the potato rolls and special sauce take it over the top. Nothing fussy, just a juicy, drippy burger that absolutely requires napkins.

Start with the dip, keep the sides coming, let the grill do its thing, and end with the burger.
