We buy all of our hand dived scallops from Jersey. They can be seasonal as the divers struggle to get out frequently during the winter and this in turn slows supply and shoots the price up in the off season. However, we try to buy a year's worth during the abundant summer months so you can enjoy dived scallops all year round. Being hand caught means the seabed looks a lot neater and healthier than if they had been caught by dredging.
