XXL prawns, charred corn, blistered cherry tomatoes, all on one baking tray — 45 minutes start to finish, and about 25 of that is the oven doing the work, not you.
Toss the corn and red onion in oil, roast 15 minutes until they start to char. Meanwhile mix 250g peeled prawns with garlic, lemon juice and thyme. Add the prawns and tomatoes to the tray, tuck in some lemon slices, and give it another 10-12 minutes until the prawns turn pink. Serves four (just about, if someone's not that hungry).
