We won't pretend it's bluefin — it's leaner, plainer, and easy to overcook if you walk away from the pan. Defrost overnight in the fridge, then sear or grill on high heat for 2–3 minutes a side, no longer, until it's just turned opaque. Squeeze of lemon, whatever vegetables are in the fridge, done.
