Beyond Tequila and Mezcal: More Agave Spirits

In celebration of our Tequila and Mezcal Show, discover the wider world of agave spirits. While Tequila and Mezcal have slowly made their way out into the wider world, they are not the only agave spirits made in Mexico. Bringing together producers from across Mexico and beyond, the show highlights a category that extends far beyond the familiar.

Agave spirits begin with the piña, whose carbohydrates convert to sugars when cooked, before fermentation and distillation shape the final character. Key factors such as agave variety, location and process define each style. Raicilla, produced in Jalisco and Nayarit, follows a mezcal-style approach with smoky ovens and long fermentations. Bacanora, from Sonora, is mostly made from roasted agaves, delivering smoky, vegetal and peppery notes. While sotol, distilled from the sotol plant, is typically fresher and more grassy than other agave spirits.
