When asked what the most important thing is when choosing a whisky, there was, unsurprisingly, an emphasis on quality. Chris Bolton, The Whisky Exchange's very own cask selector, says "The single most important criteria is the quality of the liquid. We are very selective over what we're prepared to put into glass, which means rejecting a lot of samples." Meanwhile Paul Dempsey of Brave New Spirits agreed: "We’re trying to find whiskies that make us want to show them off!"
