Anybody else limping their way through the end of school crunch? Daily cooking, for me, is often a pleasure, but when our family is going in endless different directions, I know quick and easy recipes are required.
In times like this, I try to simplify dinner.
That's when I return to this sheet pan chicken dinner. It's got herb-flecked chicken thighs (pro tip: you can add even more than the recipe calls for), a bevy of colorful veg, big hunks of melty feta, and lots of lemony sauce, perfect for spooning over super fast-cooking couscous or soaking up with a baguette.
Rewarm the leftovers gently, and you're good to go for leftovers the next day. I promise everyone will be thrilled to eat it on repeat!
