| Jess' expertise in meat really started with her first trip to Texas…
“I had my very first taste of smoked barbecue meats (we really didn't have anything like that in Australia at the time) and it was a quasi-religious experience! It was a smoked beef rib, and I can still remember the taste to this day.“
That single bite kicked off an obsession with live fire cooking and BBQ that grew into a unique brand encompassing cookery, 'meatducation' and the Texan way of life.
