| | Rib cap, as with all steaks, is best when given a hard sear. You can do this on a grill, of course, but we prefer it in a cast iron pan or on a good sturdy flat top griddle. Get the surface up over 375°F (191°C)—just point and shoot the IRK-2 to make sure the temp is high enough—before putting the steaks on to cook. Then it’s a matter of flipping and searing.
