It’s undeniable: Mexican food is having a real moment.
Good news, then, that you can learn to cook tlacoyos – a pre-Hispanic street food from Mexico City made up of oval-shaped patties stuffed with chicharrón or refried beans and topped with cheese, salsa and nopales (prickly pear) – right here in the UK.
What makes this dish so special, though, is the maiz criollo – an heirloom corn variety cultivated for centuries from Indigenous communities across Mexico with a distinct, nutty flavour – which you’ll also get to grips with.
Taking place at Food at 52 Cookery School in Shoreditch on Sunday, June 28 in collaboration with Intrepid Travel – who specialise in small-group adventures where you can experience destinations like a true local – the class will have you cooking up a storm in no time.
Guided by one of the kitchen’s professional chefs, you’ll learn every step of creating the comfort-food classic before tucking in to indulge in all its earthy, savoury and gently sweet flavours.
There are multiple sessions, so pick a date and time that suits you, and there are other endangered dishes in the series, so pick and mix, or do them all!
From the £20 ticket price, £5 will go towards The Intrepid Foundation: Intrepid Travel’s non-profit that creates positive change through the joy of travel, community and connection.
