French-born winemaker Stephan Asseo founded L'Aventure after leaving Bordeaux in search of the creative freedom to work outside the constraints of France's appellation system. He found exactly what he was looking for on Paso Robles' west side, where calcareous soils, warm days, cool nights, and Pacific influences offered remarkable potential for world class blends. Since its first vintage in 2001, Estate Cuvee has remained the winery's flagship wine, crafted entirely from estate fruit and reflecting Asseo's vision of combining Bordeaux and Rhône varieties in a distinctly Paso Robles style. Today, Stephan works alongside his daughter Chloé Asseo, continuing the family's commitment to wines shaped by their vineyard and each growing season.
